currently fermenting my first hefeweizen and just wondering when it's going to be done. it's taken a bit longer than i anticipated. already been in the fermenter 18 days, with little sign of slowing, however since my basement has been on the chilly side the past two weeks (58-65 degrees) i'm wondering if it is just taking a little longer than usual. or, since hefeweizens tend to be highly carbonated, are the bubbles just excess carbon coming out of solution? i know i should take hydro readings, but i'm really into a less is more philosophy when it comes to brewing, and my instincts have been right on every other batch. so i will do this at the three week mark, but just wanted to see if anyone else had similar experiences and wanted to impart some wisdom. thanks.

I agree, less is more. Let it run until the bubbles slow down. Then do your duty.
