  vanilla can be nice in a stout, otherwise, whatever makes you happy.
  Early in my brewing hobby, I read that some tribe used kava for brewing and
  promptly mad e a large mostly undrinkable batch.
  Nothing wrong with exploring anyway.

  I've also had a really good vanilla porter that one of the guys in my brew club made. If I remember correctly, he just added 2 vanilla beans (cut and scraped) to the secondary of a stander porter recipe.

    just started sampling a recent batch of a vanilla bean porter i made. it was inspired by, but not designed to replicate (r.i.p) magic hat ravelle. used chocalate and crystal malts for a nice rich flavor and added two cut and scraped vanilla beans to the fermenter. only change i would make would be the length of time the vanilla beans were in the wort. there is a subtle lingering bitterness that i attribute to too much time in contact with the beans.

      I have never used vanilla but once asked one of the guy at LHBS about it and suggestion was to cut and scrape, then to ensure sanitation soak it in vodka or whiskey for awhile (say a day). Then add it to secondary. In the primary fermentation you will end up blowing out all that expensive delicious vanilla essence.

        Update: We've made 2 Vanilla Brown Ales w/ oak chips (using raw vanilla beans) and they have both been great beers!!!!! YaY!! :o)

    I've done a cherry vanilla porter in the past. I used 3 beans for 5 gallons, sliced open but *not* scraped.
