apple wine or mead?

we have two abundant apple trees in our yard & we want to brew up something yummy. we usually brew our own beer so, we have all the gear for that. any advice or recipies for a good concoction made w/ apples? gear?

    My Grand father had a recipe:
    Take a 1 gallon Jug of fresh cider.
    Drill a hole in a cork and stopper the bottle with it (I am thinking a vapor lock would work better)
    Set behind the Stove (This was a LONG time ago)
    When the cork blows out its Done...

    I would add a packet of yeast and keep at 70-75 degrees
    But it sounds like fun.

    I think you are wanting to make hard cider? My friends who make it have an apple press for making cider, but I've never seen it. Otherwise, its probably like most brews - cook it, cool it, pitch yeast, wait.

    Now would it be wine if uncooked, and hard cider if cooked?

    You could make apple flavored mead if you're not in a hurry. It takes 6 months to several years to finish, depending on recipe.
