      <title>searching for the perfect IPA</title>

      <description>&lt;div&gt;I've tried a few different recipes and I've experimented to a great extent but I still haven't gotten a batch that rivals my favorite microbrew IPAs.  Specifically, I like the amazing aromas and flavors from Terminal Gravity,  Centennial and Lagunitas I P A s.  If anybody knows what I'm talking about and would share there IPA secrets, hints or recipes, I'd be most obliged.  If you have found a particularly good finishing/ aroma hops, that may be the key i'm looking for.  I bottle my latest batch tomorrow, this is the first time I've tried adding oak chips, maybe that's the key.  Thanks in advance for any suggestions.  Root&lt;/div&gt;

      <description>&lt;div&gt;Well I am a long time fan of beer but now I am ready to expand the experience by attempting to make some. I figured this is a good place to start. Well I am hoping to get a kit together soon. If any one is hoping to get rid of an old one to upgrade I would be interested in a trade or what ever. Are there any brew masters out there I would love to hear about what its like working in the industry. Especially if you’re a woman, I haven’t seen many woman brewers and was wondering if there are many near me.&lt;/div&gt;

      <title>Lagering Time</title>

&lt;br/&gt;i started a Czech Pilsner and its finished its primary fermentation and been transfered to a secondary and going into a cool place for lagering.  Question is how long?  i've read it can be between 4 and 12 weeks.  Thats a big time difference, how do i know when its finished?&lt;/div&gt;

      <description>&lt;div&gt;OK, On my 43 birthday My Fiance' dressed In an outfit that I had a hard time Looking at without wanting to stop and carry her upstairs, Helped me brew 6 Gals of Nutbrown ale... Picture a Long legged, slim waisted Beauty in thigh high stockings White 4" healed ankle high Boots, pink lace undergarments that would make a saint think of Naughty things... and a very short pink skirt... she wore this for the whole brew... and we only had to stop twice... I hope the Beer turns out ok... but if it doesnt I am not going to be too upset... Happy Brewing!!!! &lt;/div&gt;

      <description>&lt;div&gt;I just put my first batch into the fermentor and during boiling I had my hop bag with pellets open up into the brew ...doh!. At which point, and how, should I strain out that hop sediment? or should I just let it settle and just be careful about transfer to secondary fermentation???

      <title>Honey Mango Beer</title>

      <description>&lt;div&gt;Aloha, I'm new to this tribe so I wanted to say hi.  I am planning on making a five gallon batch of beer using about 6 pounds local honey and another 6 pounds of 2 row and light crystal, and the adding mango into the secondary fermenter. I was wondering if anyone out there has made a beer like this, with about half honey and half malt for fermentables. Most of the recipes I've run across were either braggots (about 10 pounds honey and only two pounds grain) or traditional honey beers (mostly grain with only a couple pounds honey). Also, anyone experimented with mango before or fruits like it?&lt;/div&gt;

      <title>Magick stick</title>

      <description>&lt;div&gt;I resently discovered how to " catch " a yeast using a carved stick made of Maple. I use pieces that are about as thick as my finger and about 5 inches long. You can use Birch and Alder too. When you do this trick, make sure you already have an active primary fermentation going with the yeast you want to catch. A healthy froth is the best ! I find that Trappist style yeasts work the best for this but it will work on any of them.
&lt;br/&gt;
&lt;br/&gt;In a small pot I have some honey and water ( 50/50 ratio ) at a rolling boil.
&lt;br/&gt;
&lt;br/&gt;I carved runes all over the stick, this makes lots of nuck and crannies for the yeast to hide in. I then place the stick over a fire, paying attention the cut end and lightly cooking it ( about 5min ) I then throw the stick into the boiling honey water while still hot and let in soak in that for about 5 min.
&lt;br/&gt;
&lt;br/&gt;While it's still hot out of the pot of honey water, carefully place the stick into the fermenter and let it stay there til primary fermentation is over. After you rack the brew, carefully fish out the stick from the yeast sediment and hang it somewhere cool, dark and dry to " cure ". The yeast will have colonized the stick and remain dormant til you place it in some fresh wort where it will then reactivate. Saves me money.&lt;/div&gt;

&lt;br/&gt;The second annual Homebrew Fair is taking place in Seattle on March 25.
&lt;br/&gt;The Homebrew Fair brings together all of the local clubs, vendors, and judges
&lt;br/&gt;for socializing, lectures, and competition.
&lt;br/&gt;
&lt;br/&gt;The competition is run to the BJCP style guidelines, but is unique,in that,
&lt;br/&gt;after the 2-person team of evaluators score the beer, they discuss it one-on-one
&lt;br/&gt;with the brewer. This rich feedback forum helps both the brewers and the judges improve their skills.
&lt;br/&gt;
&lt;br/&gt;Last year, it  was the largest one-day competition in the state and was
&lt;br/&gt;sucessful beyond our wildest dreams, mostly due to the number of people
&lt;br/&gt;that showed up to help us evaluate beers. We need judges and experienced brewers! Even if
&lt;br/&gt;you are just thinking about taking the test, this is a great opportunity, as we
&lt;br/&gt;pair inexperienced judges with "mentors" and the feedback from the brewers is like
&lt;br/&gt;real-time test experience. It's also much more rewarding to actually meet
&lt;br/&gt;the person and get their appreciation face-to-face.
&lt;br/&gt;
&lt;br/&gt;We would sincerely appreciate anybody who would like to come evaluate,
&lt;br/&gt;lecture, or just hob-nob. This year Brouwer's Cafe is hosting the post-event  party where we can continue to enjoy and discuss our passion for things fermentable. And really, that's what it is all about - the passion.

      <title>Lagering and serving beer</title>

      <description>&lt;div&gt;So I got a hold of a freezer.  I think I will build a small fermenter next to it (will suck cold air from the freezer) for ales.  How wrong would it be to store kegs of beer (ales and lagers) at the same temps I would be serving (out of the freezer also)(maybe about 50 degree F)?  What I am curious about is lagering my lagers at the 50 degrees also.

      <title>Creating life...beer style</title>

      <description>&lt;div&gt;So I haven't homebrewed in a long time. Used to be an avid brewer. Just taught a friend how to do it and I created a batch in the mean time. Felt great to get back into the business.

&lt;br/&gt;We will see how the beer tastes since it brewed at room temp (barely run the ac) with TX outside temps in the 100s. The process was clean, but I know it will have some fruity flavors &lt;/div&gt;

      <title>Mendocino County Brewery Tour, July 9-10</title>

      <description>&lt;div&gt;Monkster here...Our plan so far:
&lt;br/&gt;We are leaving SF the morning of Saturday the 9th of July; getting to Hopland that pm to drink at Mendocino County Brewery. Then up the road to Anderson Valley (in Boonville) and Ft. Bragg and North Coast Brewery. We can stay in a town hotel/B&amp;amp; B for a small sum. The inn is literally within stumbling distance of N. coast.
&lt;br/&gt;
&lt;br/&gt;The next morning we will be served breakfast and make our way at a leisurely pace to a choice of Marin and Sonoma stops, incl. Lagunitas, Moylan's, Bear Republic, and Russian River. We'll decide on the details later. 
&lt;br/&gt;
&lt;br/&gt;We'll be getting back to SF that evening, Sunday the 10th of July.
&lt;br/&gt;
&lt;br/&gt;We're asking $10 apiece to hold reservations for the group. This is non-refundable if you have to back out, but any actual trip costs will be refunded if you have to bail. I understand how that goes sometimes.

      <title>help!</title>

      <description>&lt;div&gt;i have been brewing my first beers this summer, and have had great results with every batch i have bottled so far. i have been doing a full grain souther german type weiss bier, which has always been my fav. so far so good. 
&lt;br/&gt;
&lt;br/&gt;i decided that getting a 5 gallon kegging system would be a great investment, and make things a bit easier on me, as all the bottling get to be a pain. i got the keg already setup for brew, as it was a system from my local homebrew store. i filled about half of my batch into the keg with priming sugar (as i don't like force carbonating with c02), removed the extra air and let it sit for a few weeks. at the end of that time, my beer had little (if any) carbonation, and had an off flavor. 
&lt;br/&gt;
&lt;br/&gt;i have not been able to detect any leaks in the keg, and have a hard time attributing the off flavor to bacterial issues, as i am very anal about cleaning, and the keg was fresh and heavily cleaned by the homebrew place i got it from. 
&lt;br/&gt;
&lt;br/&gt;i am a bit stumped on this. any further ideas?

      <description>&lt;div&gt;Howdy!  I'm new here, and not a brewer myself, but a big fan.  I have friends that make lots of amazing homebrews, meads, and even some...Absinthe (SHHHhhhh!!!).  Used to be there were some people doing speakeasies, and adminstering some stupendous and stupifying elixirs.  Sadly I haven't heard about anybody doing any as of late, and I'm wondering if they're still happening.       <title>Agave nectar</title>

      <description>&lt;div&gt;   Fermented Agave nectar is a really refreshing drink with a twist of lime. I usually use a wine yeast when I make some. In Mexico they ferment an Agave drink called Pulque. The best kind of nectar to use in dark unfiltered, it has the most nutrients. i find it helps to add a little honey to get the yeast going. I use about 1/2 gallon of nectar to make a 3 gallon batch. It takes a long time to ferment like honey. You can also distill Pulque to make Teqkillya ! A good addmixure plant to Agave nectar is Yarrow. Yarrow contains thujones, the active intoxicant found in Absinthe ( derived from Wormwood ) but without all the toxic sideffects. It can be 5% alcohol but with Yarrow added it'll feel more like 8% alcohol. Cactus prickly pears are also good to mix in Agave nectar fermentations. There's nothing like it on a hot day.&lt;/div&gt;

      <title>Cheap Conical from Toledo Metal Spinning</title>

&lt;br/&gt;	I figure I can put together a conical fermenter for around $300, which is $150 to $300 cheaper than you can buy one.  To get this price I need Toledo Metal Spinning's volume discount, so I have a proposition.  For those of you that do not know, Toledo Metal Spinning sells a hopper that with a little work can be converted into a 12 gallon conical fermenter.  Since the homebrew community found out about this they raised their prices in accordance with the demand.  However, if you order 25 or more of the hoppers you get a good discount, so I would like to get together with at least 24 of my closest homebrewing friends and place an order.  Unfortunately, I do not know 24 people who brew so I am appealing to this community.
&lt;br/&gt;
&lt;br/&gt;Here is the deal I offer:
&lt;br/&gt;
&lt;br/&gt;1. Email me if you are interested.  The hoppers are $100 at that volume (a bigger discount on orders of 50 or more).  Add in some shipping costs.
&lt;br/&gt;2. Once I have at least 24 replies, I will send you a request for payment.  This payment will include the cost of the hopper, shipping to my place and shipping from my place to yours.
&lt;br/&gt;3. Once I have a minimum of 24 orders, I will send out a due date for payments.  Payments received after the due date will be returned and not be included in the order.
&lt;br/&gt;4. When I get the order, I'll ship out the hopper to you via USPS delivery tracking.
&lt;br/&gt;5. I figure I can put together a working 12 gallon conical fermenter for around $300.  If you would like me to build a similar one for you, let me know and I'll finalize the price, put it together, tack on the shipping costs and send it off to you.  Features include:
&lt;br/&gt;    All ss fittings
&lt;br/&gt;    Inexpensive PVC stand - painted to the color you like
&lt;br/&gt;    Clear acrylic lid so you can watch the fermentation

&lt;br/&gt;Things you need to know:
&lt;br/&gt;
&lt;br/&gt;1. There are no holes in the hoppers.  If at least 25 of us want Toledo Metal to make the holes we get a volume discount of $13 per hole.  More details available.
&lt;br/&gt;2. You will need to purchase dump valve and side racking arm assemblies.  Zymco sells products designed for this (NAYY).
&lt;br/&gt;3. The hoppers don't stand up by themselves.  Zymco also sells a stand.  I think I'll make mine out of painted pvc.
&lt;br/&gt;4. You will need some sort of lid.  Toledo Metal Spinning sells one designed for their hoppers, but since there is no volume discount I'll leave that up to you.   (Unless there is a shipping savings.)  I plan on making mine out of acrylic.
&lt;br/&gt;5. If you don't buy the Zymco stand kit, you need a seal and some way to clamp the lid down.  allorings.com sells an o-ring that should fit.  You'll still need to get an airtight seal.  I plan on taking the plunge into "open" fermenters, and just setting the lid on my fermenter.

      <title>3 Brewer Tribes?</title>

      <description>&lt;div&gt;I noticed there were three (at least) brewers Tribes.  Which one? Hmmm...  I joined all three.  This one has the most members though.  Maybe it's the most likely to take off...  Or maybe the tribes should converge into one?   Opinions?&lt;/div&gt;

      <description>&lt;div&gt;How does everyone feel about posting their favorite recipes?  Do you like to keep your personal recipes well guarded secrets?  Or are you more the type to share a good thing when it happens?

      <title>Hoegaarden Clone</title>

&lt;br/&gt;Hoegaarden Clone  
&lt;br/&gt; 
&lt;br/&gt;Here's a recipe I made to try and clone my favorite Belgian ale. (A white ale). I got pretty close! Sorry, all-grainers, it's a partial mash.... It's a tastey beer though, I promise. If you make this one...let me know what you think..  
&lt;br/&gt; 
&lt;br/&gt;Hoegaarden Wit Clone  
&lt;br/&gt;SG 1.046 (calculated using ProMash)  
&lt;br/&gt;IBU 18.0 (calculated using ProMash)  
&lt;br/&gt; 
&lt;br/&gt;MALT  
&lt;br/&gt;3.30 lbs. Light liquid malt extract  
&lt;br/&gt;2.00 lbs. Dry wheat malt extract  
&lt;br/&gt;0.50 lbs. Cracked unmalted wheat  
&lt;br/&gt;0.50 lbs. Rolled (flaked) oats  
&lt;br/&gt; 
&lt;br/&gt;HOPS (pellet)  
&lt;br/&gt;0.5oz Saaz (60 minutes in boil)  
&lt;br/&gt;0.7oz E.K. Goldings (60 minutes in boil)  
&lt;br/&gt;0.5oz Saaz (15 minutes in boil)  
&lt;br/&gt; 
&lt;br/&gt;OTHER  
&lt;br/&gt;1.25 tsp. (0.1oz) Coriander seeds (15 mminutes in boil)  
&lt;br/&gt;2.00 tsp. (0.1oz) Dried BITTER Orange (15 minutes in boil)  
&lt;br/&gt; 
&lt;br/&gt;Steep whole grains in 1/2 gallon water @ 155F for 30 minutes. Rinse with 1 or 2 pints of 170F water. Remove grains, add 2.0 gal water &amp;amp; extract, start 60 minute boil. Add hops and other ingredients as specified.  
&lt;br/&gt; 
&lt;br/&gt;White Labs Belgian Wit Ale Yeast (WLP400)  
&lt;br/&gt; 
&lt;br/&gt;Notes: Adding 2 oz of lactic acid may give an even more authentic Hoegaarden taste. I thought it may need a slight boost in the coriander and bitter orange as well; maybe even double the quantity of each??? But maybe that's too much.                                     &lt;/div&gt;
